We specialize in superb New York State cheddar, aged on-site from one to seven years–so you are sure to find the sharpness you like. We also offer an array of flavored white cheddars and 14 different cheddar spreads (from garlic & herb to port wine to sun-dried tomato & basil, and many more!), and “squeaky” cheese curd.

We use milk produced on-site at the family farm to create high-quality cheeses and more. We offer five hard/aged cheeses: Mercy (creamy cheddar), Grace (aged Gouda), Glory (cream cheese cultured with yogurt), Caerphilly (Welsh cheese), and Amazing Grace (aged over a year, sharp-yet-smooth).

We also have feta, cheese curds in five flavors, yogurt (whole-milk and Greek) and yogurt smoothies, quark, dips.

Bobby McFlee’s Irish Beer Cheese, Herkimer, NY


By popular demand, the star cheese of The Great American Irish Festival returns to the Little Falls Cheese Festival! This special recipe is made from a variety of hard and soft cheeses blended with herbs, spices, and beer (you’ll notice horseradish, garlic, and a little kick of hot pepper). Needs refrigeration and still remains spreadable or dunkable—perfect for crackers, vegetables, and even spread on a burger or sandwich.


Fresh from the Catskills! Our family farm is home to 45 Holstein milk cows and 35 head of young stock. The cows are pastured and no rBST is used. We work hard to bring you high quality, wholesome products.

Our Farmstead Gouda is a raw milk Gouda aged at least 60 days. Plain variety in red-waxed wedges and small wheels. Also available: cumin seed, caraway, dill, and aged cider-washed varieties.


The cheesemaker, Patrick, is a French expat from the Poitou region who came to America a couple decades ago. In partnership with neighboring Amish farmers (including working closely with the development of the herd), he produces three Loire-Valley style goat’s milk cheeses.

The flagship St. Johnsville cheese is light ivory in color; its flavors evolve from buttery and mild when young to earthy, goaty, barnyardy, full-bodied-yet-still-creamy after a few weeks of ripening (it was recently praised in the New York Times as “a paragon of subtle elegance”). 

Mohawk Mist is meltingly tender, milky and buttery, with just a hint of mild goat flavor and a slightly tangy finishing note.

NEW FOR THE 2019 FESTIVAL: Oriskany is a goat-milk cheese featuring a thick cream line over a dense yet creamy core. A lively tart note is followed by buttery and nutty flavors.


We craft a variety of artisanal raw-milk cheeses: America Cheese Society (ACS) award-winning Toma Celena (a nutty and rich Italian table cheese, hinting of toasted grains, apples and caramelized milk), Justine (half sheep’s milk, half cow’s milk), a classic aged English cheddar called Jersey Gold, and another ACS award-winner, Jersey Girl (flavorful, creamy curd cheese).

We’re also bringing Jersey Girl Reserve, aged at least 18 months–crystalline and mellow, the sweetness comes through.

Our family has taken the ideal of traditional farmstead cheese and elevated it. By using raw milk exclusively from our own dairy farm we are able to maintain control—literally from pasture to plate. Clean, healthy, happy grass-fed cows combined with a modern take on time-honored traditional cheese-making methods have brought us to this endeavor.

The “terroir” of Wyoming County has led us to focus solely on French alpine style cheeses.

Our Underpass cheese won a Gold Medal at the 2017 NYS Fair. It is a Raclette-style cheese; Raclette has a smooth and creamy texture that develops a sharper bite as it ages. It melts beautifully and this is what it is best known for. We’re also bringing some superb Underpass Reserve, and aptly named Happy Accident, another delectable raw-milk, Raclette-style cheese.

Silver Lake cheese won a gold medal at the 2018 NYS Fair. This one is a Gruyere-style cheese (part of the “Swiss family”). Silver Lake is aged longer than our Underpass cheese, which gives this hard cheese pronounced nutty and earthy tones. This cheese goes great on everything—think macaroni and cheese, fondue, and cheese plates!

We make fresh goat-milk chèvre. Our basil pesto chèvre won a 2018 ACS Gold Medal!

We’re a small family farm in the hilltowns of Albany. Offering fresh and soft ripened cheeses. Following true artisan tradition, our cheeses are handcrafted in small batches using pasteurized milk. This allows us to produce the freshest quality product. No added hormones or preservatives.

A squeak above the rest! Rich, creamy, squeaky cheese curd made fresh from our farm’s fresh dairy cow milk–-natural, plus tasty flavors (including dilly garlic, buffalo, horseradish chive, tomato basil, and more). We also produce an aged farmstead (cheddar-style) cheese. Prospect Piquant is an aged, semi-soft cheese.

The ability for our cows to graze fresh Central New York grass every spring, summer, and fall is of utmost importance to the health and happiness of our cows. 100% of our quality milk products are made from milk from our own happy, healthy cows.

Promoting gouda goodness through local artisan cheese!

We’re in the business of making people happy. The best way we know how? Make mind-blowingly good, locally processed gouda cheese. Smoked gouda, aged gouda, baby gouda, and much more. We use BST-free Holstein cow’s milk. Family owned and operated.

Our aged gouda earned the 2015 Gold Medal at the NYS Fair and a plaque making it “the best wine and cheese pairing”! In 2018, it won a Silver Medal and Ribbon (second place).

Our booth will also offer delicious homemade cookies and other baked goods.

NEW FOR THE 2019 FESTIVAL: This year, we’re bringing our XX Sharp Cheddar.


Our artisan cheeses vary from fresh, semi-aged, and aged—and include chevre, feta, marinated feta, mozzarella, goat cheddar “Caldwell,” farmhouse-style cream cheese “Kuyahoora Creme,” mold-ripened goat “Duvet Blanc” and “Isadore,” fiery “Hexen Trüffel,” and our new blue goat cheese ripened in NY-bourbon-soaked corn husks “Harvest Moon.”

Using simple ingredients, we also make flavorful, refreshing dairy-free sorbets and gelatos (using nothing but whole milk)—the perfect snack for a hot summer day!

The American Cheese Society named our Cayuga Blue “best goat’s blue cheese in the nation”! Other goat milk cheeses we offer include: chèvre, feta, Finger Lakes Gold (hard aged), Seneca Blue Moon (bloomy rind).

For cow milk cheeses, we’ll be bringing Blue Yonder, Gorge Trail Gouda, Shire (beer-brined gouda), Lake Effect Cheddar, Sheldrake Moon (brie style).

We are a small local farm. We milk our own goats (Alpines and LaManchas); their diet is primarily native pasture. We then process our artisan cheese right here: different flavors of chèvre, plain and flavored feta, plain and smoked havarti.

Our plain goat’s milk feta cheese took first place at the American Dairy Goats Association cheese contest in Portland, Maine!

Our products are made by master  cheesemaker Sean O’Connor. We offer a full line of artisan cheeses. The milk we use is  sourced by Willow Marsh Farm and local farmers primarily in Saratoga County.

Among our cow’s milk cheeses are: Ballston Blue (a mellow, nutty, Roquefort-veined, semi-firm cheese), Rolitini (mozzarella rolled with prosciutto), smoked mozzarella, burrata, and silky, mellow fresh mozzarella. Also, brie and Collar City Cream (triple cream ripened cheese).

Among our goat’s milk cheeses are: feta, goat cheddar, Eclipse (soft, ash-ripened), semi-soft Gavin’s Goat Milk Blue, Camembert, and innovative, delicious varieties of chevre. Also offering “Scape Goat'“ (semi-firm goat cheese with garlic scapes), and soft sweet goat-cheese logs (orange-ginger, strawberry-rhubarb, pepper jam).

Among our sheep’s milk cheeses are: Shepard’s Blue, Sheep’s Cheddar, and a ripened Sheep Camembert.

Among our blended cheeses are: Brûlée (a blend of cow and sheet milk, semi-firm cheese with charred rind) and Collar City Cambembert (blend of cow and sheep milk ripened cheese).


Three Village Cheese is proud to be part of the resurgence of local food produced in the Kuyahoora Valley. A family-run artisan cheese company, Three Village Cheese was founded in 2009 with the goals of making great cheese and supporting Herkimer County’s dairy farmers. Our farmer’s high-quality milk, together with the creativity and hard work of our cheesemakers, creates unique and exclusive cheeses.

We make hard cows' milk cheeses such as our Kuyahoora. Named after the river valley in which it is made, Kuyahoora is nice and sharp with a delicate mushroomy finish.

We also make hard goats' milk cheeses, including our award-winning Cascadita. Inspired by a Spanish recipe, we gave this delicious cheese a Spanish name after the city of Little Falls (Cascadita means "little cascade," or "little waterfall"). Cascadita has a big bold flavor with nutty tones.

We are a small family farm in the Catskills that is home to, among many others, goats, dairy sheep, Jersey cows, chickens, dogs, cats, and alpacas. We are committing to producing and living sustainably with as small a carbon footprint as possible.

Our: Betta Feta (cow/goat blend, feta style), won the Gold Medal for farmstead artisan cheese at the 2018 New York State Fair in Syracuse. In 2017, it won the Silver Award, while our Mountain Medley cow/goat blend, gouda style won the Bronze Award.
